A piece of France in your kitchen ; French Onion Soup

We would like to occasionally provide you with great French recipes, so here is our first offering;

French onion soup soupe a l'oignon
A must try recipe, charming, delicious and simple.

Prep time = 20 minutes, Cook time = 60 minutes.

Ingredients (for 6)

650-700g onions , thinly sliced into rings
50g butter or 3 tablespoons olive oil
2 crushed cloves of garlic
2 tablespoons flour
2 ½ pints (1.5 litres) of beef stock
Few dashes of white wine, or cognac if you prefer
Salt and pepper
8 oz (225g) grated greyere cheese

For the croutons;
French bread cut into 1 inch diagonal slices.
1 tablespoon olive oil
1 crushed clove of garlic

Method
Make the croutons by drizzling the oil and placing garlic on a baking sheet, spread oil and garlic and coat the bread pieces , both sides. Bake them in the oven until crispy.
Get a saucepan , melt the butter/oil until very hot, add the onions and brown , should take about 20-30 minutes.
Mix in the flour, stir gently. Next add the beef stock and wine, bring to a boil. Reduce the heat, cover the pan and simmer for another 30 minutes.
Serve the soup into oven proof bowls, add the croutons and sprinkle with cheese, should take a few minutes to brown. Mmmmmm...
